- 2 pounds Boneless, skinless chicken thighs
- 1 cup Barbecue sauce
- 1 Onion, chopped
- 2 cloves Garlic, minced
- 1 teaspoon Smoked paprika
- Salt and pepper to taste
- Buns for serving (optional)
- Coleslaw for topping (optional)
Instructions
- Combine the chopped onion, minced garlic, smoked paprika, salt, and pepper in a slow cooker.
- Place the chicken thighs on top of the mixture and pour the barbecue sauce over everything.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until the chicken is tender.
- Remove the chicken from the slow cooker and shred it with two forks.
- Return the shredded chicken to the slow cooker and mix well with the sauce.
- Serve on buns and top with coleslaw if desired.
Notes
Use quality barbecue sauce for the best flavor and consider letting shredded chicken sit in sauce for better incorporation.
