Ingredients
Scale
- 2 cups shredded cooked chicken (rotisserie chicken works well)
- 1 cup diced potatoes (any type)
- 1 cup diced carrots (fresh or frozen)
- 1 cup frozen peas
- 1/2 cup diced onions (sweet or yellow onions)
- 3 cups low-sodium chicken broth
- 1 cup heavy cream (adjust for desired creaminess)
- 1/4 cup flour (can substitute with cornstarch for gluten-free options)
- 2 tablespoons butter (for sautéing vegetables)
- Salt and pepper (to taste)
- 1 teaspoon thyme (fresh or dried)
Instructions
- Melt the butter in a large pot over medium heat.
- Add onions, carrots, and potatoes; sauté until softened.
- Stir in flour and cook for 1-2 minutes until it begins to thicken.
- Whisk in chicken broth, stirring constantly until thickened.
- Add shredded chicken, peas, heavy cream, thyme, salt, and pepper.
- Simmer for 10-15 minutes until heated through.
- Serve warm and enjoy!
Notes
For a richer flavor, consider using homemade chicken broth. Cook the vegetables until they are just tender for the best texture. If your soup is too thick, simply add more broth or cream until desired consistency is reached.
