Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the chopped bacon in a skillet over medium heat until crispy. Remove the bacon and set aside, leaving the drippings in the pan.
  3. Add sliced onions to the skillet and caramelize them in the bacon drippings.
  4. Layer half of the sliced potatoes in a baking dish, followed by half of the caramelized onions and bacon.
  5. Sprinkle with salt, pepper, garlic powder, and thyme.
  6. Pour half of the heavy cream over the layers, then sprinkle half of the cheese.
  7. Repeat the layers with the remaining ingredients.
  8. Top with the remaining cheese and dot with butter.
  9. Cover the dish with foil and bake for 45 minutes.
  10. Remove the foil and bake for an additional 15-20 minutes until the potatoes are tender and the top is golden and bubbly.
  11. Let cool for a few minutes before serving.
