Ingredients
Scale
- 1 cup unsalted butter, melted
- 2 1/2 cups brown sugar (packed)
- 2 large eggs
- 1 tablespoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 2 medium apples, peeled and diced (about 1 1/2–2 cups)
- 1 cup caramel sauce (store-bought or homemade)
- Optional: 1/2–3/4 cup chopped pecans or walnuts
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×13-inch pan (or line with parchment for easy removal).
- Peel and dice the apples into small, even pieces; optionally toss them with a pinch of cinnamon to boost flavor.
- In a large bowl, whisk the melted butter and brown sugar until smooth. Add the eggs and vanilla, mixing until fully combined.
- In a separate bowl, whisk together the flour, baking powder, salt, and cinnamon.
- Fold the dry ingredients into the wet mixture until just combined — avoid overmixing to keep the blondies tender.
- Gently fold in the diced apples and half of the caramel sauce (reserve the rest for drizzling). If using nuts, fold them in now.
- Pour the batter into the prepared pan and smooth the top. Drizzle the remaining caramel over the batter and swirl lightly with a knife for a marbled effect.
- Bake for about 30–35 minutes, or until the edges are golden and a toothpick inserted in the center comes out mostly clean with a few moist crumbs (some goo from caramel is okay).
- Let cool in the pan for at least 15 minutes before slicing into squares. For cleaner cuts, let cool longer or chill briefly.
Notes
For best texture, store cooled blondies in an airtight container. Use parchment between layers to prevent sticking.
