Carrot Apple Salad

A refreshing salad combining the sweetness of apples with the crunch of carrots, perfect as a side or light main course.

Ingredients

  • 2 cups grated carrots
  • 2 cups grated apple (any sweet variety)
  • 1/4 cup raisins
  • 1/4 cup chopped walnuts or pecans
  • 1/4 cup Greek yogurt or mayonnaise
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Combine the grated carrots and grated apples in a large mixing bowl.
  2. Add the raisins and chopped nuts to the bowl.
  3. Prepare the dressing by mixing together the Greek yogurt (or mayonnaise) and lemon juice in a separate small bowl.
  4. Toss the salad with the dressing gently to combine.
  5. Season with salt and pepper to taste.
  6. Chill in the refrigerator for at least 30 minutes before serving.

Notes

Grate the carrots and apples just before mixing to maintain crispness. For a vegan option, substitute Greek yogurt with plant-based yogurt. Consider adding cinnamon or nutmeg for extra flavor.
