Instructions
- Combine the grated carrots and grated apples in a large mixing bowl.
- Add the raisins and chopped nuts to the bowl.
- Prepare the dressing by mixing together the Greek yogurt (or mayonnaise) and lemon juice in a separate small bowl.
- Toss the salad with the dressing gently to combine.
- Season with salt and pepper to taste.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
Grate the carrots and apples just before mixing to maintain crispness. For a vegan option, substitute Greek yogurt with plant-based yogurt. Consider adding cinnamon or nutmeg for extra flavor.
