Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- Mix together flour, sugar, baking powder, baking soda, cinnamon, and salt in a large bowl.
- Combine oil, eggs, grated carrots, crushed pineapple, and vanilla in another bowl.
- Gradually add the wet ingredients to the dry ingredients, mixing just until combined.
- Pour the batter into the prepared pan and bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Let the bars cool completely in the pan before frosting.
- Beat together cream cheese and butter until smooth, then add powdered sugar and vanilla; spread over cooled bars and cut into squares to serve.
Notes
Grate carrots finely for even texture and consistent moisture. Drain crushed pineapple well to avoid a soggy batter. Cool completely before frosting.
