  • 1/4 cup butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. Mix together flour, sugar, baking powder, baking soda, cinnamon, and salt in a large bowl.
  3. Combine oil, eggs, grated carrots, crushed pineapple, and vanilla in another bowl.
  4. Gradually add the wet ingredients to the dry ingredients, mixing just until combined.
  5. Pour the batter into the prepared pan and bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  6. Let the bars cool completely in the pan before frosting.
  7. Beat together cream cheese and butter until smooth, then add powdered sugar and vanilla; spread over cooled bars and cut into squares to serve.

Notes

Grate carrots finely for even texture and consistent moisture. Drain crushed pineapple well to avoid a soggy batter. Cool completely before frosting.
