- 4 Chicken breasts, boneless, skinless
- 1 cup Monterey Jack cheese, shredded
- 1 cup Cheddar cheese, shredded
- 2 Tomatoes, diced
- Fresh parsley, chopped (optional for garnish)
- Salt, to taste
- Pepper, to taste
- Olive oil or butter, for cooking
Instructions
- Preheat the oven to 375°F (190°C).
- Heat a large oven-safe skillet over medium-high heat and add olive oil or butter.
- Season the chicken breasts with salt and pepper, then add them to the skillet.
- Cook the chicken for 5-7 minutes on each side until golden brown.
- Sprinkle the shredded Monterey Jack and cheddar cheese on top of the cooked chicken.
- Add the diced tomatoes and chopped parsley over the cheese.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes until the chicken is cooked through and the cheese is melted and bubbly.
- Remove from the oven and let it rest for a few minutes before serving.
Notes
Use fresh herbs for garnish to enhance flavor and presentation. Allow chicken to rest after baking for juiciness.
