Cheesy Taco Potatoes

A satisfying dish combining roasted potatoes, seasoned ground beef, and gooey cheese, perfect for comfort food lovers.

  • Total Time: 45 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 1 ½ lbs Russet potatoes, scrubbed and cut into small cubes
  • 2 tbsp Olive oil (can substitute with vegetable oil)
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1 tsp Smoked paprika (adds depth to flavor)
  • 1 tsp Chili powder (adjust for spiciness)
  • ½ tsp Ground cumin (for earthy notes)
  • 1 tsp Salt (adjust to taste)
  • ½ tsp Black pepper (freshly ground recommended)
  • 1 lb Ground beef (or turkey)
  • 1 packet Taco seasoning (1 oz or use homemade blend)
  • ⅓ cup Water (to help the seasoning blend)
  • 1 ½ cups Shredded cheddar cheese (or mix with Monterey Jack)
  • ½ cup Sour cream (for topping)
  • ¼ cup Chopped green onions or cilantro (optional garnishes)
  • Diced tomatoes, jalapeños, avocado slices (optional additional toppings for serving)

Instructions

  1. Preheat your oven to 425°F (220°C). Toss the cubed potatoes with olive oil, garlic powder, onion powder, paprika, chili powder, cumin, salt, and pepper. Spread them evenly on a parchment-lined baking sheet.
  2. Brown the ground beef in a skillet over medium-high heat. Drain any excess fat before adding the taco seasoning and water. Stir well and let it simmer for about 5 minutes until thickened.
  3. Transfer the roasted potatoes to a large oven-safe skillet or casserole dish. Layer the seasoned beef over the potatoes, then sprinkle the shredded cheese evenly on top.
  4. Return the dish to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
  5. Top the dish with sour cream, green onions, and any additional toppings like diced tomatoes, jalapeños, or avocado before serving warm.

Notes

For a vegetarian version, substitute the beef with black beans or lentils. Ensure even roasting by cutting potatoes into uniformly small cubes.
