  • 2 cups cooked rice
  • 1/2 cup frozen peas (optional)
  • 1/2 cup chopped broccoli (optional)
  • 1 can cream of chicken soup
  • 1 cup sour cream
  • 1 cup chicken broth
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the cooked chicken, cooked rice, cream of chicken soup, sour cream, cheese, chicken broth, garlic powder, onion powder, salt, and pepper in a large bowl.
  3. Add peas and broccoli if using, stirring until evenly distributed.
  4. Transfer the mixture into a greased 9×13-inch casserole dish, spreading into an even layer.
  5. Bake for 30-35 minutes, or until the casserole is hot and bubbly and the top is lightly golden.
  6. Let it cool for a few minutes before serving so it sets slightly.

Notes

Use day-old cooked rice for best texture; it absorbs sauce without getting mushy. For saucier results, stir in a few tablespoons of simple gravy into the mix.
