  • Total Time: 375-495 minutes
  • Yield: 6 servings 1x

Ingredients

Scale
  • 1 lb Ground beef (or ground turkey/chicken) – Choose lean for a healthier option.
  • 2 cans (15 oz each) Kidney beans – Drain and rinse before adding.
  • 1 can (15 oz) Black beans – Drain and rinse prior to use.
  • 1 Large onion – Diced finely for better distribution.
  • 3 cloves Garlic – Minced for maximum flavor.
  • 1 can (28 oz) Crushed tomatoes – Provides the base of the chili.
  • 1 can (6 oz) Tomato paste – Enhances the tomato flavor.
  • 2 cups Beef or chicken broth – Choose low-sodium for a healthier dish.
  • 2 tbsp Chili powder – Adds depth and warmth.
  • 1 tsp Ground cumin – Provides an earthy flavor.
  • ½ tsp Smoked paprika – Offers a subtle smokiness.
  • ½ tsp Cayenne pepper (optional) – For an extra kick of heat.
  • Salt and black pepper – To taste.
  • 1 tbsp Olive oil – Used for browning the meat.
  • Optional toppings – As desired (consider shredded cheese, sour cream, cilantro, and lime wedges).

Instructions

  1. Heat olive oil in a skillet over medium heat. Brown the ground beef until no pink remains.
  2. Drain excess fat and transfer the browned meat to the crockpot.
  3. Add diced onion and minced garlic to the crockpot, stirring to combine with the meat.
  4. Pour in kidney beans, black beans, crushed tomatoes, and tomato paste. Stir until evenly mixed.
  5. Add broth, chili powder, cumin, smoked paprika, cayenne (if using), salt, and pepper. Mix well.
  6. Cover and cook on low for 360-480 minutes or high for 180-240 minutes until flavors meld.
  7. Taste and adjust seasoning. Ladle into bowls and top with your favorite garnishes.

Notes

For ground turkey or chicken, ensure it’s cooked fully before transferring to the crockpot. You can also use homemade broth for a richer flavor.
