Ingredients
Scale
- 4 Boneless chicken breasts (Can substitute with thighs if preferred)
- 1 cup Fresh parsley, chopped (For a stronger flavor, use more parsley)
- 1/2 cup Fresh cilantro, chopped (Cilantro can be replaced with another herb like mint)
- 4 cloves Garlic, minced (Fresh garlic enhances flavor over powdered)
- 1/4 cup Red wine vinegar (Apple cider vinegar can be used as an alternative)
- 1/2 cup Olive oil (Extra virgin olive oil adds richness)
- 1 teaspoon Red pepper flakes (Adjust to taste for spiciness)
- Salt and pepper to taste (Essential for enhancing flavors)
Instructions
- Mix parsley, cilantro, garlic, red wine vinegar, olive oil, red pepper flakes, salt, and pepper to create the chimichurri sauce.
- Marinate the chicken breasts in half of the chimichurri sauce for at least 30 minutes (up to 2 hours for more flavor).
- Preheat your grill or oven to medium-high heat.
- Grill or bake the marinated chicken for 6-7 minutes on each side, or until fully cooked.
- Serve the chicken drizzled with the remaining chimichurri sauce.
Notes
