Chipotle Honey Chicken Thighs With Smoked Gouda Mashed Potatoes

A sweet-smoky comfort dinner featuring crispy chicken thighs glazed in a sticky chipotle-honey sauce, served over creamy smoked Gouda mashed potatoes.

  • Total Time: 60 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 6 bone-in, skin-on chicken thighs (about 2 lb)
  • 1/3 cup honey
  • 23 tbsp adobo sauce from canned chipotles (or 12 minced chipotles)
  • 1 tbsp apple cider vinegar
  • 1 tbsp soy sauce or tamari
  • 1 garlic clove, minced
  • 2 lb russet or Yukon Gold potatoes
  • 4 oz smoked Gouda, shredded
  • 4 tbsp butter
  • 1/2 cup milk (more as needed)
  • Salt and pepper to taste
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • Olive oil for brushing

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Marinate the chicken thighs in the chipotle honey sauce for at least 30 minutes.
  3. Place the marinated chicken thighs on a baking sheet and bake for about 25-30 minutes, or until cooked through and caramelized.
  4. Meanwhile, peel and chop the potatoes, then boil them in salted water until tender.
  5. Drain the potatoes, then mash with butter, milk, smoked Gouda, salt, and pepper until creamy.
  6. Serve the chicken thighs over the smoked Gouda mashed potatoes.

Notes

Pat the chicken skin dry before marinating for extra crispiness. Adjust the glaze ingredients to balance the heat of the adobo sauce.
