Ingredients
Scale
- 1 cup grated zucchini (fresh zucchini, finely grated)
- 1 cup sugar (granulated or brown sugar)
- 1/2 cup vegetable oil (can use canola or melted coconut oil)
- 2 large eggs (room temperature preferred)
- 1 teaspoon vanilla extract (pure vanilla for best flavor)
- 1 cup all-purpose flour (can substitute with whole wheat flour)
- 1/2 cup unsweetened cocoa powder (dark cocoa for a richer taste)
- 1/2 teaspoon baking soda (for leavening)
- 1/2 teaspoon baking powder (for additional lift)
- 1/4 teaspoon salt (enhances overall flavor)
- 1/2 cup chocolate chips (optional, dark or semi-sweet for added flavor)
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking pan.
- Mix together the grated zucchini, sugar, vegetable oil, eggs, and vanilla extract in a large bowl until well combined.
- Whisk together the flour, cocoa powder, baking soda, baking powder, and salt in another bowl.
- Add the dry ingredients to the wet mixture gradually, stirring until just combined. Fold in chocolate chips if using.
- Pour the batter into the prepared baking pan and spread it evenly.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Cool the brownies before cutting them into squares and serving.
Notes
Ensure your zucchini is thoroughly drained to avoid excess moisture. Use high-quality cocoa powder for a deeper flavor. Let the brownies cool completely before cutting for cleaner slices.
