Cinnamon Roll Muffins

Delightful cinnamon roll muffins that combine soft, gooey flavors for a comforting breakfast or snack.

Ingredients

  • 2 cups All-purpose flour
  • 3/4 cup Granulated sugar
  • 1 tbsp Baking powder
  • 1/2 tsp Salt
  • 1 cup Milk
  • 1/2 cup Unsalted butter (melted)
  • 1 Large egg
  • 1 tsp Vanilla extract
  • 1/2 cup Brown sugar
  • 2 tbsp Ground cinnamon
  • 1/4 cup Unsalted butter (for filling, melted)
  • 1 cup Powdered sugar
  • 2 tbsp Milk (for glaze)
  • 1/2 tsp Vanilla extract (for glaze)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mix dry ingredients in a large mixing bowl: flour, granulated sugar, baking powder, salt, and ground cinnamon.
  3. Whisk wet ingredients in another bowl: milk, melted unsalted butter, egg, and vanilla extract.
  4. Add wet ingredients to the dry ingredients and stir until just combined.
  5. Prepare filling by mixing brown sugar and melted butter in a separate bowl.
  6. Fill muffin tins halfway with batter, then add a spoonful of the filling mixture on top.
  7. Top with remaining batter to cover the filling completely.
  8. Bake muffins for 20-25 minutes until a toothpick inserted comes out clean.
  9. Prepare glaze by mixing powdered sugar, milk, and vanilla extract in a small bowl until smooth.
  10. Drizzle glaze over cooled muffins before serving.

Notes

Use room temperature ingredients for better mixing and fluffiness. Do not overmix the batter as it can lead to dense muffins.
