- 2 lbs Potatoes (Yukon Gold or red potatoes work best)
- 1 cup Mayonnaise (can use Greek yogurt for a healthier option)
- 1 tablespoon Dijon mustard (yellow mustard can be used as an alternative)
- 1/2 cup Diced celery (adds crunch; use chopped pickles for tang)
- 1/2 cup Diced onion (red onion provides color; green onions can also be used)
- 1/4 cup Chopped green bell pepper (crisp texture; substitute with other bell peppers if preferred)
- 1 tablespoon Cajun seasoning (adjust according to your spice tolerance)
- Salt and pepper to taste
- 1/4 cup Chopped green onions (for garnish)
Instructions
- Boil the potatoes in salted water until fork-tender. Drain and let cool, then peel and cut into cubes.
- Mix the mayonnaise, Dijon mustard, Cajun seasoning, salt, and pepper in a large bowl.
- Add in the cooled potatoes, celery, onion, and bell pepper. Mix gently until the potatoes are well coated.
- Chill the salad for at least an hour before serving.
- Garnish with chopped green onions before serving chilled.
Notes
For best results, allow the salad to chill longer than one hour to meld flavors. Customize the heat to your liking with Cajun seasoning.
