Cottage Cheese Flatbread

Light, fluffy, and protein-packed flatbread, perfect as a base for various toppings for any meal.

Ingredients

  • 1 cup whole milk cottage cheese (4% fat)
  • 2 large eggs
  • Pinch salt (optional)
  • Cooking spray
  • Fresh herbs, olive oil drizzle, sliced tomatoes, or everything bagel seasoning (optional toppings)

Instructions

  1. Preheat a nonstick skillet over medium heat and spray with cooking spray.
  2. Blend cottage cheese, eggs, and salt until smooth and spreadable.
  3. Spoon about 1/4 to 1/3 cup of batter into the hot skillet and spread into a 5- to 6-inch circle.
  4. Cook for 2–3 minutes until edges look set and bottom is golden, then flip and cook for another 1–2 minutes.
  5. Transfer to a plate and top as desired, repeating with remaining batter.
  6. Store cooled flatbreads in an airtight container for up to 3 days.

Notes

Use whole milk cottage cheese for the best texture and flavor; cool completely before refrigerating to maintain crispness.
