Instructions
- Combine the Ingredients: In a large mixing bowl, combine black beans, corn, red and green bell peppers, red onion, cherry tomatoes, and avocado.
- Add Flavor: Drizzle the mixture with fresh lime juice and add chopped cilantro.
- Season: Sprinkle salt and pepper to taste for enhancement.
- Mix Gently: Mix all ingredients gently to avoid mashing the avocado while ensuring even distribution.
- Chill and Serve: Serve immediately or refrigerate for an hour to allow flavors to meld. Serve chilled with tortilla chips.
Notes
Use ripe avocados for best flavor. Don’t skip the lime juice for acidity. Let the dish sit for at least 30 minutes before serving to allow blending of flavors.
