Cowboy Stir Fry Recipe for Busy Weeknights

A quick and hearty cowboy stir fry with smoked sausage, vegetables, and potatoes, perfect for busy weeknights.

  • Total Time: 35 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 14 oz Smoked sausage (turkey or veggie), sliced into rounds
  • 1½ lbs Yukon Gold potatoes, sliced (or halved if using baby potatoes)
  • 1 medium Zucchini, chopped
  • 1 small Onion, chopped
  • 1 small Red bell pepper, chopped
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1 tsp Smoked paprika
  • ½ tsp Black pepper
  • 1 tsp Salt, adjust to taste
  • 2 tbsp Oil (avocado or olive oil), for cooking
  • Fresh parsley, for garnish (optional)

Instructions

  1. Preheat your griddle or large skillet by heating it over medium-high heat for 3-5 minutes. Add 1 tablespoon of oil.
  2. Cook the sliced Yukon Gold potatoes to the griddle. Season them with garlic powder, onion powder, smoked paprika, salt, and black pepper. Cook for 10-12 minutes, stirring occasionally, until they are golden brown and fork-tender.
  3. Push the potatoes to one side of the griddle. Add the remaining 1 tablespoon of oil and the sliced sausage. Cook for about 5 minutes, stirring occasionally, until the sausage is browned and slightly crisp on the edges.
  4. Stir in the zucchini, onion, and red bell pepper. Cook for an additional 5-7 minutes, until the vegetables are tender but still slightly crisp.
  5. Taste the dish and adjust salt and pepper as needed. Garnish with fresh parsley if desired and serve hot.

Notes

Ensure sausage is fully browned for a richer flavor. Cut vegetables uniformly for even cooking.
