Ingredients
Scale
- 1 cup apple cider (Fresh apple cider is preferred for best flavor)
- 1/2 cup granulated sugar plus 1/2 cup for rolling (Brown sugar can add depth to the flavor)
- 1/2 cup brown sugar (Light or dark variety works well)
- 1/2 cup vegetable oil (Can be substituted with melted butter)
- 2 large eggs (Room temperature eggs integrate better)
- 1 teaspoon vanilla extract (For enhanced flavor)
- 2 cups all-purpose flour (No alternatives in this recipe)
- 1 teaspoon baking powder (Aiding in the muffin rise)
- 1 teaspoon baking soda (Works with the acidity of the apple cider)
- 1 teaspoon ground cinnamon plus 1 teaspoon for rolling (The star spice in these muffins)
- 1/2 teaspoon ground nutmeg (Adds warmth to the flavor)
- 1/4 teaspoon salt (Enhances sweetness)
