- 4 Boneless, skinless chicken breasts
- 1 cup Brie cheese, cut into small pieces
- 1 cup Cranberry sauce
- Salt and pepper, to taste
- 1 tablespoon Olive oil
- Fresh herbs for garnish (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Season the chicken breasts with salt and pepper to taste.
- Prepare a pocket in each chicken breast using a sharp knife.
- Stuff each pocket with pieces of brie cheese and spoon in cranberry sauce.
- Heat olive oil in a skillet over medium heat.
- Sear the chicken breasts for 3-4 minutes on each side until golden brown.
- Transfer the chicken to a baking dish and bake for 20-25 minutes until cooked through.
- Let the chicken rest for a few minutes before serving and garnish with fresh herbs if desired.
Notes
Use a meat thermometer to ensure the chicken reaches an internal temperature of 165°F (74°C). Let leftovers cool completely before storing to avoid sogginess from steam.
