Cranberry Brie Stuffed Chicken Breast

  • 4 Boneless, skinless chicken breasts
  • 1 cup Brie cheese, cut into small pieces
  • 1 cup Cranberry sauce
  • Salt and pepper, to taste
  • 1 tablespoon Olive oil
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the chicken breasts with salt and pepper to taste.
  3. Prepare a pocket in each chicken breast using a sharp knife.
  4. Stuff each pocket with pieces of brie cheese and spoon in cranberry sauce.
  5. Heat olive oil in a skillet over medium heat.
  6. Sear the chicken breasts for 3-4 minutes on each side until golden brown.
  7. Transfer the chicken to a baking dish and bake for 20-25 minutes until cooked through.
  8. Let the chicken rest for a few minutes before serving and garnish with fresh herbs if desired.

Notes

Use a meat thermometer to ensure the chicken reaches an internal temperature of 165°F (74°C). Let leftovers cool completely before storing to avoid sogginess from steam.
