Ingredients
Scale
- 1 lb Boneless, skinless chicken breasts, diced
- 1 cup Orzo pasta (can substitute with rice or another pasta)
- 4 tablespoons Unsalted butter
- 4 cloves Garlic, minced (fresh garlic preferred for flavor)
- 1 medium Onion, diced
- 1 Bell pepper, diced (choose your preferred color)
- 1 teaspoon Cajun seasoning (adjust based on spice preference)
- 1 cup Chicken broth (can use vegetable broth as an alternative)
- 1 cup Heavy cream (for a lighter option, use half-and-half)
- 1/2 cup Grated Parmesan cheese (freshly grated is best)
Instructions
- Melt 2 tablespoons of butter in a large skillet over medium heat.
- Add the diced chicken and season with Cajun seasoning. Cook until browned and cooked through for about 5–7 minutes. Remove chicken and set aside.
- Add the remaining butter, onion, and bell pepper to the skillet. Sauté for 4 minutes until softened.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the orzo to the skillet and pour in the chicken broth. Bring to a boil.
- Cover and simmer for 10–12 minutes until the orzo is tender.
- Stir in the heavy cream and Parmesan cheese until combined.
- Return the cooked chicken to the skillet and mix until heated through.
- Serve hot, garnished with fresh parsley.
Notes
Use fresh herbs to enhance flavor, and adjust the consistency with more broth or cream if necessary. For a vegetarian version, substitute chicken with mushrooms or tofu and use vegetable broth.
