Creamy Gnocchi with Spinach and Feta

Ingredients

  • 1 pound gnocchi
  • 2 cups fresh spinach
  • 1 cup feta cheese, crumbled
  • Parmesan cheese for garnish (optional)
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the gnocchi according to package instructions in a large pot of boiling salted water. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Add fresh spinach and cook until wilted, about 2-3 minutes.
  4. Pour in the heavy cream and stir to combine. Allow it to simmer for a few minutes until slightly thickened.
  5. Add the cooked gnocchi and crumbled feta to the skillet. Toss to combine.
  6. Season with salt and pepper to taste.
  7. Serve warm, garnished with Parmesan cheese if desired.

Notes

For a cheesier twist, swap in a soft herbed cheese. Don’t overcook the gnocchi; they’re done when they float.
