- 8 oz Penne pasta
- 1 lb Chicken breast, diced
- 1 cup Fresh pesto sauce
- 1 cup Cherry tomatoes, halved
- 2 tbsp Olive oil
- Salt, to taste
- Pepper, to taste
- Parmesan cheese (optional), as desired
Instructions
- Boil the penne pasta according to package instructions. Once cooked, drain and set aside.
- Heat the olive oil in a skillet over medium heat. Add the diced chicken breast and season with salt and pepper. Cook until no longer pink.
- Incorporate the halved cherry tomatoes into the skillet, cooking for an additional 2-3 minutes until slightly softened.
- Stir in the prepared pesto sauce and the cooked penne pasta. Mix thoroughly until well combined and heated through.
- Serve warm, topped with freshly grated Parmesan cheese if desired.
Notes
Use high-quality fresh pesto for best flavor; homemade is ideal. Cook chicken to an internal temperature of 165°F for safety.
