Creamy Poblano Sauce For Tacos

  • 3 Poblano Peppers, roasted until charred
  • 1 cup Sour Cream or Crema
  • 1 tablespoon Lime Juice, freshly squeezed
  • 2 cloves Garlic, minced
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Preheat your oven to 450°F (230°C).
  2. Place the poblano peppers on a baking sheet and roast them in the oven for about 20-25 minutes, turning them halfway through, until the skin is charred and blistered.
  3. Once roasted, place the peppers in a bowl and cover it with plastic wrap to steam for 10 minutes.
  4. Peel the skins off the peppers, remove the seeds and stems, and roughly chop them.
  5. In a blender, combine the roasted poblano, sour cream (or crema), lime juice, garlic, salt, and pepper.
  6. Blend until smooth, adjusting seasoning to taste.

Notes

For best flavor, choose fresh poblano peppers and make sure to roast them well.
