- 1 lb Chicken breasts, boneless and skinless recommended
- 1 cup Orzo pasta, can substitute with rice if needed
- 1 cup Heavy cream, can use half-and-half for a lighter version
- 2 cups Chicken broth, low sodium preferred
- 2 cups Fresh spinach, substitutes include kale or Swiss chard
- 1 cup Diced tomatoes, canned or fresh
- 1 Onion, chopped (red or yellow works well)
- 3 cloves Garlic, minced (can use garlic powder in a pinch)
- 1 tsp Italian seasoning, homemade blend recommended for freshness
- Salt and pepper to taste, season appropriately
Instructions
- Combine the chicken, chicken broth, diced tomatoes, chopped onion, minced garlic, and Italian seasoning in the slow cooker.
- Set the slow cooker to low for 6-7 hours or high for 3-4 hours until the chicken is thoroughly cooked.
- Remove the chicken from the slow cooker, shred it using two forks, and return it to the slow cooker.
- Stir in the orzo, heavy cream, and spinach into the mixture.
- Cook on low for an additional 30 minutes, or until the orzo is tender.
- Season with salt and pepper according to your preferences before serving warm.
