- 2 pounds Red Potatoes
- ½ cup Mayonnaise
- ¼ cup Sour Cream
- 2 tablespoons Apple Cider Vinegar
- 2 tablespoons Dijon Mustard
- 1 small Red Onion, chopped
- 5 strips Bacon, cooked and crumbled
- 1 cup Cheddar Cheese, shredded
- ¼ cup Fresh Parsley, chopped
- ¼ cup Dill Pickles, chopped
- Salt, to taste
- Black Pepper, to taste
Instructions
- Wash and cut the red potatoes into bite-sized pieces. Place them in a pot and cover with water. Bring to a boil and cook until tender, about 15-20 minutes.
- In a mixing bowl, combine the mayonnaise, sour cream, apple cider vinegar, Dijon mustard, salt, and pepper. Whisk until smooth and well blended.
- While the potatoes are cooking, fry the bacon strips in a skillet until crispy. Drain on paper towels and crumble into bite-sized pieces.
- Once the potatoes are cooked, drain them and let cool for a few minutes. In a large bowl, mix the potatoes with chopped red onion, crumbled bacon, cheddar cheese, dill pickles, and fresh parsley.
- Pour the dressing over the potato mixture and gently fold until everything is coated evenly. Adjust salt and pepper to taste.
- Cover and refrigerate for at least 30 minutes to allow the flavors to meld. Serve chilled.
Notes
Use firm red potatoes for the best texture. Allow the potatoes to cool slightly before adding the dressing for optimal consistency.
