- 8 oz Pasta (fettuccine or penne)
- 1 lb Shrimp (peeled and deveined)
- 2 cups Fresh spinach
- 1/2 cup Sun-dried tomatoes (packed in oil)
- 1 cup Heavy cream
- 1/2 cup Chicken or vegetable broth
- 2 cloves Garlic (minced)
- 1/2 cup Grated Parmesan cheese
- Salt and pepper To taste
- For cooking Olive oil
- For garnish Fresh basil (optional)
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- Sauté garlic in a large skillet with olive oil over medium heat until fragrant.
- Add the shrimp to the skillet and cook until pink and opaque, about 2-3 minutes per side.
- Incorporate the sun-dried tomatoes and fresh spinach, cooking until the spinach wilts.
- Create the sauce by pouring in the broth, then stirring in heavy cream and Parmesan cheese. Simmer until thickened.
- Season with salt and pepper to taste.
- Toss the cooked pasta with the sauce to combine.
- Serve hot, garnished with fresh basil if desired.
