- 1 1/2 cups dried chickpeas (or 3 cans, 15 oz each, drained)
- 1 cup fresh parsley and cilantro, packed
- 1 small onion, roughly chopped
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp baking powder
- Salt to taste
- 2 tbsp olive oil (for falafel mixture)
- 1/2 cup tahini
- 2 tbsp fresh lemon juice, plus extra for garnish
- 2 tbsp olive oil (for tahini sauce)
- Water as needed
Instructions
- Soak dried chickpeas in plenty of water overnight (8-12 hours) or drain and rinse canned chickpeas.
- Drain chickpeas and add them to a food processor along with parsley, cilantro, onion, garlic, cumin, coriander, baking powder, salt, and 2 tbsp olive oil. Pulse until finely chopped but not mushy.
- Transfer the mixture to a bowl, cover, and refrigerate for at least 30 minutes.
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Scoop heaping tablespoons of the mixture and form into balls or patties. Place on the baking sheet.
- Lightly brush or spray falafel with olive oil. Bake for 12-15 minutes, flip, and bake for another 12-15 minutes until golden and crispy.
- While baking, whisk tahini with lemon juice, garlic, olive oil, parsley, salt, and enough water for a creamy consistency.
- Serve warm with herbed tahini sauce and desired garnishes.
Notes
Ensure the chickpeas are well-soaked and do not over-process the mixture for the best texture. Refrigeration before baking is crucial for holding the falafel together.
