- 1 cup Fresh Spinach (packed, can substitute with kale)
- 1 cup Cherry Tomatoes (halved, any small tomatoes work)
- ½ cup Feta Cheese (crumbled, goat cheese can be used)
- 2 tablespoons Olive Oil (for cooking, can use butter)
- Salt to taste
- Pepper to taste
- ½ cup Cream Cheese or Yogurt (for dipping)
Instructions
- Heat the olive oil in a pan over medium heat.
- Place one tortilla in the pan and layer it with spinach, cherry tomatoes, and crumbled feta cheese.
- Top with another tortilla and cook until the first side is golden brown.
- Carefully flip the quesadilla and cook until the second side is golden and the cheese melts.
- Repeat the process with the remaining ingredients to make more quesadillas.
- Cut the quesadillas into wedges and serve them with your choice of creamy dip.
Notes
