- 6 medium Carrots (peeled)
- 2 tablespoons Extra virgin olive oil
- ½ teaspoon Kosher salt
- 2 teaspoons Garlic, minced
- ½ teaspoon Onion powder
- ½ teaspoon Red pepper flakes (optional)
- 1 teaspoon Fresh rosemary, chopped
- 2 cups Grated Parmesan cheese (divided)
- Chopped parsley (for garnish), as needed
Instructions
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- Cut carrots into 2-inch sections and then slice each section in half lengthwise.
- In a large mixing bowl, combine olive oil, kosher salt, minced garlic, onion powder, red pepper flakes, and chopped rosemary. Toss carrot pieces until well-coated.
- Sprinkle 1½ cups of Parmesan cheese evenly on the lined baking sheet.
- Place carrot pieces cut-side down on top of the cheese layer without gaps.
- Add the remaining Parmesan cheese over the arranged carrots.
- Bake for 30–35 minutes until tender and crispy.
- Let cool slightly, garnish with chopped parsley, and serve warm.
Notes
For best results, slice carrots evenly, use high-quality Parmesan, and avoid overcrowding baking sheets.
