- 4 small to medium boneless skinless Chicken breasts (or 2 large halved)
- Salt and pepper to taste
- 2 tablespoons Olive oil
- 3–4 cloves Garlic, minced
- 1 cup Cream (light or heavy)
- 1 tablespoon Italian seasoning or oregano
- 1/2 cup Grated Parmesan cheese
- 1 cup Optional: chopped spinach
Instructions
- Season the chicken breasts evenly with salt and pepper on both sides.
- Pat the chicken dry with paper towels to remove surface moisture for better browning.
- Pound thicker areas gently until the thickness is even for uniform cooking.
- Heat olive oil in a skillet over medium-high heat until shimmering but not smoking.
- Place the seasoned chicken in the skillet and cook for 5-6 minutes without moving it.
- Flip the chicken and cook for 5-6 minutes on the second side until golden brown and crispy.
- Remove the chicken from the skillet and set aside on a plate, tenting loosely with foil.
- Reduce the skillet heat to medium-low to prevent burning the garlic when added.
- Add the minced garlic to the skillet and sauté for about 30 seconds until fragrant.
- Stir in the cream and sprinkle in the Italian seasoning, stirring to combine evenly.
- Add the grated Parmesan gradually while stirring until the sauce becomes smooth and glossy.
- Fold in the chopped spinach if using and simmer for 2-3 minutes until wilted and incorporated.
- Return the seared chicken to the skillet and spoon the sauce over each piece to coat.
- Simmer the chicken in the sauce for about one minute to reheat and meld flavors.
- Plate the chicken and spoon extra sauce over the top, saving any remaining sauce for serving.
Notes
Ensure the chicken is patted dry for better browning and do not overcrowd the pan while searing.
