Ingredients
Scale
- 3 medium zucchinis, fresh, cut into fry shapes
- 1 cup panko breadcrumbs, can substitute with regular breadcrumbs
- 1/2 cup grated Parmesan cheese, freshly grated yields better flavor
- 2 large eggs, beaten for coating
- 1 teaspoon garlic powder, adds flavor complexity
- Salt and pepper, to taste
- Cooking spray or olive oil, for drizzling
- Garlic aioli, for dipping, optional
- Marinara sauce, for dipping
Instructions
- Preheat your air fryer to 400°F (200°C).
- Cut the zucchinis into fry or stick shapes.
- Beat the eggs in a bowl until well mixed.
- Combine panko breadcrumbs, grated Parmesan cheese, garlic powder, salt, and pepper in another bowl.
- Dip each zucchini fry into the beaten egg, ensuring it’s well-coated.
- Coat the fry thoroughly with the breadcrumb mixture.
- Spray the air fryer basket with cooking spray or drizzle with olive oil.
- Arrange the coated zucchini fries in the basket in a single layer.
- Cook for 10 to 12 minutes, turning halfway through, until golden brown and crispy.
- Serve hot with garlic aioli and marinara sauce for dipping.
Notes
For extra crispiness, add a bit of cornstarch to your breadcrumb mixture. Ensure the zucchini sticks are uniform in size and do not overcrowd the air fryer basket.
