  • Yield: 4 servings 1x

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup dry Marsala wine
  • 1 cup low-sodium chicken broth
  • 8 ounces mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • Salt and black pepper, to taste
  • 1 tablespoon olive oil
  • Fresh parsley, for garnish

Instructions

  1. Pat the chicken breasts dry with paper towels.
  2. Season both sides of the chicken with salt and black pepper.
  3. Heat the olive oil in a large skillet over medium heat.
  4. Sear the chicken breasts for several minutes on each side until golden brown.
  5. Transfer the seared chicken breasts to the crockpot.
  6. Add the minced garlic and sliced mushrooms to the same skillet.
  7. Sauté the mushrooms and garlic until the mushrooms become tender.
  8. Pour the Marsala wine into the skillet.
  9. Pour the chicken broth into the skillet.
  10. Scrape the browned bits from the skillet bottom with a wooden spoon.
  11. Simmer the mixture briefly to combine the wine, broth, mushrooms, and garlic.
  12. Pour the skillet mixture over the chicken in the crockpot.
  13. Cover the crockpot with its lid.
  14. Cook the chicken on low for 6 to 8 hours.
  15. Cook the chicken on high for 3 to 4 hours when a faster meal is needed.
  16. Check that the thickest chicken breast reaches 165°F internally.
  17. Stir the heavy cream into the crockpot approximately 30 minutes before serving.
  18. Season the sauce with additional salt and black pepper.
  19. Cover the crockpot and finish cooking until the sauce is hot and creamy.
  20. Garnish the chicken with fresh parsley.
  21. Serve the chicken hot with plenty of mushroom Marsala sauce.

Notes

Pat the chicken dry for proper browning. Use dry Marsala wine for a balanced flavor. Add heavy cream during the last 30 minutes for best texture.
