Ingredients
Scale
- 1 pound ground beef (80% to 85% lean)
- 1 packet onion soup mix (regular or reduced-sodium)
- 1 cup breadcrumbs (plain, seasoned, panko, or gluten-free)
- 1 large egg
- 1/2 cup milk (whole, 2%, or unsweetened dairy-free)
- Salt and pepper to taste
- 1 onion, sliced (yellow, white, or sweet)
- 1 cup shredded cheese (Swiss or mozzarella)
- 1/4 cup beef broth (low-sodium)
Instructions
- Combine the ground beef, onion soup mix, breadcrumbs, egg, milk, salt, and pepper in a large bowl.
- Mix the ingredients gently until evenly combined.
- Shape the mixture into a compact loaf that fits comfortably inside the Crockpot.
- Place the shaped meatloaf in the Crockpot.
- Arrange the sliced onion evenly over the top of the meatloaf.
- Pour the beef broth around and over the loaf without washing away the onion topping.
- Cover the Crockpot securely with its lid.
- Cook the meatloaf on low for 6 to 8 hours, until the center reaches a safe internal temperature.
- Check the temperature in the thickest part using an instant-read thermometer.
- Sprinkle the shredded Swiss or mozzarella cheese over the cooked onions and meatloaf approximately 30 minutes before serving.
- Cover the Crockpot again and continue cooking until the cheese melts completely.
- Rest the meatloaf for 10 minutes before slicing.
- Serve the slices warm with the softened onions and cooking juices.
Notes
For best results, use 80% to 85% lean ground beef, mix gently, and let the loaf rest before slicing.
