Easy Creamy Cucumber Salad

A refreshing and delicious low-carb cucumber salad, perfect for summer BBQs with creamy dressing and crunchy cucumbers.

  • Total Time: 20 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 2 medium Cucumbers, sliced
  • 1 cup Sour Cream, full-fat recommended
  • 2 tbsp Lemon Juice, freshly squeezed
  • 1/2 Red Onion, finely chopped
  • 2 tbsp Dill, fresh or 1 tsp dried
  • 1/2 tsp Salt
  • 1/4 tsp Garlic Powder
  • 1/4 tsp Black Pepper, freshly ground

Instructions

  1. Slice the cucumbers and toss with 1/4 teaspoon of salt.
  2. Let them sit in a colander for 15-20 minutes to draw out excess moisture.
  3. Pat the cucumbers dry with paper towels after they have rested.
  4. In a bowl, whisk together the sour cream, lemon juice, chopped red onion, dill, garlic powder, and black pepper.
  5. Fold the patted-dry cucumbers into the dressing until they are fully coated.
  6. Chill the salad in the refrigerator for 20 minutes before serving.

Notes

Select firm cucumbers and ensure you salt them properly to avoid a watery salad. Serve chilled for maximum refreshment.
