Ingredients
- Grated zucchini, 1 cup (ensure it’s well-drained)
- All-purpose flour, 1 cup (can substitute with gluten-free flour)
- Cocoa powder, 1/2 cup (use unsweetened for best results)
- Sugar, 1/2 cup (white granulated)
- Brown sugar, 1/4 cup (light or dark)
- Vegetable oil, 1/2 cup (can use melted coconut oil)
- Large eggs, 2
- Vanilla extract, 1 teaspoon
- Baking soda, 1/2 teaspoon
- Salt, 1/4 teaspoon
- Chocolate chips, 1/2 cup (optional)
Instructions
- Preheat the oven to 350°F (175°C) and grease a baking pan.
- Mix together the grated zucchini, vegetable oil, sugar, brown sugar, eggs, and vanilla extract until well combined.
- Whisk together the flour, cocoa powder, baking soda, and salt in another bowl.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Fold in the chocolate chips if using.
- Pour the batter into the prepared baking pan and spread it evenly.
- Bake for 25-30 minutes, or until a toothpick inserted comes out clean.
- Allow to cool before cutting into squares and serving.
Notes
Make sure to drain excess moisture from the grated zucchini to avoid soggy brownies. Use high-quality cocoa powder for a richer chocolate flavor.
