Ingredients
Scale
- 3 cups All-purpose flour
- 2 1/4 tsp Active dry yeast
- 1/4 cup Baking soda
- 4 tbsp Unsalted butter, melted
- 2 tsp Salt
- Coarse salt for sprinkling, to taste
- 1 cup Beer (lager or pale ale)
- 2 cups Shredded sharp cheddar cheese
- 4 oz Cream cheese
- 1 tsp Garlic powder
- 1 tsp Mustard powder
- 1 1/4 cups Warm water (110°F/43°C)
- 1 tbsp Sugar
- 1 Egg (for egg wash)
- 1 tbsp Water (for egg wash)
Instructions
- Combine warm water, active dry yeast, and 1 tablespoon of sugar in a large bowl. Stir gently and let sit for 5 minutes until foamy.
- Add melted butter and salt to the yeast mixture, then mix in flour gradually. Knead on a floured surface for 5-7 minutes until smooth.
- Place the dough in a greased bowl, cover, and let rise in a warm spot for about 1 hour or until doubled in size.
- Punch down the dough and roll it into ropes, cutting into 1 to 1.5-inch pieces.
- Fill a large pot with water and bring to a boil. Add baking soda carefully, then reduce heat to a simmer.
- Boil bites in batches for 30 seconds to 1 minute until they puff. Remove with a slotted spoon to a lined baking sheet.
- Preheat the oven to 450°F (230°C). Brush the bites with egg wash and sprinkle with coarse salt. Bake for 12-15 minutes until golden brown.
- While baking, whisk together beer, cream cheese, garlic powder, mustard powder, and cheddar in a saucepan over medium heat until smooth.
- Keep the sauce warm until serving.
Notes
Knead until the dough is smooth; use beer you enjoy drinking for better flavor; experiment with different cheeses.
