Ingredients
Scale
- 12 oz Smoked Sausage (Andouille, kielbasa, or spicy Italian recommended)
- 1 cup Long-Grain White Rice (can substitute with brown rice, but cook time will vary)
- 2 ½ cups Low-Sodium Chicken Broth (homemade broth can be used for extra flavor)
- 2 tbsp Cajun Seasoning (adjust to taste based on spice preference)
- ½ cup Heavy Cream (can replace with half-and-half for a lighter option)
- 1 medium Bell Pepper, diced (any color will work)
- 3 cloves Garlic, minced (fresh is preferred)
- 2 tbsp Unsalted Butter (use salted butter cautiously to control salt levels)
- Salt and Pepper to taste (adjust based on preference)
Instructions
- Heat 1 tablespoon of butter over medium heat in a large skillet. Add the sliced sausage and cook until browned and slightly crispy, about 4-5 minutes. Remove sausage and set aside.
- In the same pan, add the remaining tablespoon of butter, then add the diced bell pepper and minced garlic. Sauté for 3-4 minutes until the pepper softens.
- Stir in the rice, coating it in the butter and veggie mixture, and toast for 1-2 minutes. Add the Cajun seasoning and stir well.
- Pour in the chicken broth, bring to a gentle boil, reduce heat to low, and cover. Let it simmer for 18-20 minutes until the rice is tender and liquid is mostly absorbed.
- Stir in the heavy cream and browned sausage, cooking uncovered for another 2-3 minutes until heated through and sauce thickens. Adjust salt and pepper to taste.
