- 4 Salmon fillets (about 6 oz / 170 g each, fresh or frozen, thawed if frozen)
- ½ cup Teriyaki sauce (store-bought or homemade, adjust to taste)
- 4 cups Mixed vegetables (broccoli, bell peppers, snap peas recommended)
- 2 tablespoons Olive oil (can use sesame oil for more flavor)
- 2 cups Cooked rice (Jasmine or brown rice works well)
- 1 tablespoon Toasted sesame seeds (for garnish)
- 2 stalks Green onions (sliced, for garnish)
Instructions
- Preheat your oven to 400°F (200°C) and line a large rimmed sheet pan with parchment paper or a silicone baking mat.
- Whisk together soy sauce, brown sugar, minced garlic, grated ginger, and rice vinegar to prepare the teriyaki sauce.
- Marinate the salmon fillets in half of the teriyaki sauce for 10 minutes.
- Toss the mixed vegetables in another bowl with olive oil and a pinch of salt, then spread them on one side of the sheet pan.
- Position the marinated salmon skin-side down on the other side of the sheet pan, and drizzle the remaining teriyaki sauce over everything.
- Roast in the oven for 12-15 minutes until the salmon flakes easily and the vegetables are tender.
- Serve by dividing the cooked rice into bowls, topping with roasted vegetables and salmon, and garnish with toasted sesame seeds and sliced green onions.
Notes
Use high-quality fresh salmon for the best results. Customize vegetables based on preference. Allow salmon to marinate longer for deeper flavor.
