Ingredients
Scale
- 1.5 lbs Boneless, skinless chicken breasts
- 1 cup Pineapple salsa
- 1 tsp Garlic powder
- 1 tsp Ground cumin
- 1 tsp Chili powder
- Salt and pepper to taste
- 2 cups Cooked jasmine rice
- Optional toppings: Avocado, cheese, cilantro, lime, sour cream
Instructions
- Pat the chicken breasts dry with paper towels and sprinkle them with garlic powder, ground cumin, chili powder, salt, and pepper.
- Place the seasoned chicken in the slow cooker and pour pineapple salsa over the top.
- Cover and cook on low for 240 to 300 minutes or until the chicken is tender and can be easily shredded.
- Once cooked, shred the chicken right in the slow cooker and mix it with the salsa.
- Prepare the jasmine rice according to the package instructions.
- In a bowl, add cooked rice, shredded chicken, and any optional toppings you desire.
Notes
Ensure your slow cooker is preheated to maximize cooking efficiency. Let the chicken sit for a few minutes after shredding to absorb more flavor. Opt for fresh or homemade salsa for the best flavor.
