- 3 medium Yellow onions, sliced
- 1 cup Brown or green lentils, rinsed
- 6 cups Vegetable broth, low-sodium
- 4 Garlic cloves, minced
- 2 tablespoons Tomato paste
- 1 teaspoon Smoked paprika
- 1 large Bay leaf
- 1 tablespoon Apple cider vinegar
- 2 tablespoons Olive oil
- Salt and pepper, to taste
Instructions
- Heat olive oil in a large pot over medium-low heat.
- Add sliced onions and a pinch of salt; stir to coat.
- Cook slowly, stirring every 5 minutes, until onions are deep golden brown and caramelized, about 25-30 minutes.
- Add minced garlic and cook for 1 minute.
- Stir in tomato paste and cook for another minute.
- Add rinsed lentils, smoked paprika, bay leaf, and vegetable broth; stir to combine.
- Increase heat to bring to a boil.
- Lower heat to maintain a simmer, partially cover, and cook until lentils are tender, about 25-30 minutes.
- Remove from heat, fish out bay leaf, and stir in apple cider vinegar. Taste and adjust salt and pepper before serving.
Notes
For a richer flavor, use homemade vegetable broth. Ensure onions are well caramelized for the best sweetness. Add a splash of soy sauce for umami flavor.
