  • 1 cup Dark chocolate chips (60-70% cocoa)
  • 1/2 cup Unsalted butter (1 stick, softened)
  • 1 cup Powdered sugar (sifted)
  • 2 Large eggs (room temperature)
  • 1 teaspoon Vanilla extract
  • 1 cup Heavy cream (chilled)

Instructions

  1. Melt the chocolate chips and butter together in a double boiler, stirring until smooth.
  2. Remove the double boiler from heat and let the chocolate mixture cool slightly.
  3. Beat the eggs in a mixing bowl until thickened and pale.
  4. Add the cooled chocolate mixture gradually to the eggs, whisking to prevent cooking.
  5. Mix in the powdered sugar until glossy and combined.
  6. Stir in the vanilla extract to finish the base.
  7. Whip the heavy cream in a chilled bowl until stiff peaks form.
  8. Gently fold the whipped cream into the chocolate mixture until uniform.
  9. Pour the filling into the pie crust and smooth the top.
  10. Refrigerate for at least 4 hours to set before serving.
