Garden Salad with Calamari

A refreshing garden salad featuring tender calamari paired with vibrant greens and vegetables, perfect for summer meals.

Ingredients

  • 12 oz Calamari, cleaned rings or tubes
  • 6 cups Mixed greens (lettuce, spinach)
  • 1 cup Cherry tomatoes, halved
  • 1 medium Cucumber, sliced
  • 1/4 cup Red onion, thinly sliced
  • 1 small Bell pepper, diced
  • 3 tbsp Olive oil
  • 2 tbsp Lemon juice
  • Salt to taste
  • Pepper to taste
  • 2 tbsp Fresh herbs (parsley or basil), chopped

Instructions

  1. Prepare the calamari by rinsing under cold water; slice tubes into rings if desired.
  2. Cook the calamari in boiling water for 2-3 minutes until tender. Drain and transfer to an ice bath.
  3. Combine the salad ingredients in a large bowl: mixed greens, cherry tomatoes, cucumber, red onion, and bell pepper.
  4. Prepare the dressing by whisking together olive oil, lemon juice, salt, and pepper in a separate bowl.
  5. Toss the salad with the cooled calamari and drizzle dressing over the ingredients. Toss gently to combine.
  6. Garnish with fresh herbs and serve immediately or chill before serving.

Notes

For best flavor, allow the salad to chill in the refrigerator for 15-30 minutes before serving.
