- 12 oz Calamari, cleaned rings or tubes
- 6 cups Mixed greens (lettuce, spinach)
- 1 cup Cherry tomatoes, halved
- 1 medium Cucumber, sliced
- 1/4 cup Red onion, thinly sliced
- 1 small Bell pepper, diced
- 3 tbsp Olive oil
- 2 tbsp Lemon juice
- Salt to taste
- Pepper to taste
- 2 tbsp Fresh herbs (parsley or basil), chopped
Instructions
- Prepare the calamari by rinsing under cold water; slice tubes into rings if desired.
- Cook the calamari in boiling water for 2-3 minutes until tender. Drain and transfer to an ice bath.
- Combine the salad ingredients in a large bowl: mixed greens, cherry tomatoes, cucumber, red onion, and bell pepper.
- Prepare the dressing by whisking together olive oil, lemon juice, salt, and pepper in a separate bowl.
- Toss the salad with the cooled calamari and drizzle dressing over the ingredients. Toss gently to combine.
- Garnish with fresh herbs and serve immediately or chill before serving.
Notes
For best flavor, allow the salad to chill in the refrigerator for 15-30 minutes before serving.
