Instructions
- Cook the Noodles: Follow the instructions on the package to cook the glass noodles. Once done, drain them and set aside.
- Heat the Oil: In a large skillet or wok, heat sesame oil over medium heat until shimmering.
- Sauté Aromatics: Add minced garlic and ginger to the hot oil, and sauté until fragrant, about 1-2 minutes.
- Add Vegetables: Incorporate the chopped cabbage, bell peppers, and carrots. Stir-fry for 3-4 minutes or until the vegetables are tender-crisp.
- Combine Noodles and Seasoning: Add the cooked noodles to the skillet along with soy sauce, salt, and pepper. Toss everything together until evenly combined and heated through, about 2-3 minutes.
- Garnish and Serve: Remove from heat and garnish with sliced scallions before serving hot.
Notes
Soak glass noodles in hot water before boiling for a softer texture. Avoid overcooking the vegetables to maintain crunchiness.
