- 4 Boneless, skinless chicken breasts
- 6 oz Goat cheese, softened
- 2 Large onions, thinly sliced
- 2 tbsp Olive oil
- Salt and pepper to taste
- 1 tsp Dried thyme or fresh thyme
- 1/2 cup Chicken broth
- 1 tbsp Balsamic vinegar (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat. Add the sliced onions and cook until caramelized and golden brown, about 15-20 minutes.
- Season the chicken breasts with salt, pepper, and thyme.
- Slice a pocket into each chicken breast and fill it with goat cheese and caramelized onions.
- Secure the openings with toothpicks if necessary, and place chicken in a baking dish.
- Pour chicken broth and balsamic vinegar (if using) into the dish.
- Cover with foil and bake for 25-30 minutes or until cooked through.
- Remove the foil and bake for an additional 5-10 minutes for a golden finish.
- Let the chicken rest for a few minutes before serving.
Notes
Use room temperature goat cheese for easier stuffing. Ensure onions are thinly sliced for even caramelization.
