Ingredients

- 1 pound Sirloin steak (substitute with flank steak or tenderloin if desired)
- 2 Large potatoes (Yukon Gold or red)
- 1 Bell pepper (any color)
- 1 Onion (red or yellow)
- 2 tablespoons Olive oil (avocado oil as alternative)
- 1 teaspoon Garlic powder (fresh minced garlic can be substituted)
- 1 teaspoon Paprika (smoked paprika for a different flavor)
- Salt and pepper to taste
- Skewers (metal or soaked wooden skewers)
Instructions
- Cut the steak and potatoes into bite-sized pieces.
- Parboil the potatoes for about 10 minutes until slightly tender.
- Combine olive oil, garlic powder, paprika, salt, and pepper in a bowl.
- Add the steak and potato pieces, along with chopped bell pepper and onion, to the marinade and toss to coat.
- Thread the steak, potatoes, bell pepper, and onion onto skewers.
- Preheat the grill to medium-high heat.
- Grill the kabobs for 10-12 minutes, turning occasionally, until the steak is cooked to your desired doneness and the potatoes are crisp and golden.
- Serve hot and enjoy!
Notes
Marinate your steak for at least 30 minutes for enhanced flavor. Use a meat thermometer to check doneness; aim for 145°F for medium-rare.
