Grilled Thai Coconut Chicken Skewers

A delicious twist on traditional grilled chicken, marinated in coconut milk, ginger, and lime juice for a tropical flavor.

  • Total Time: 72 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 1 pound Chicken breast, cut into bite-sized pieces
  • 1 cup Coconut milk, use full-fat for richer flavor
  • 1 tablespoon Ginger, freshly grated
  • 2 cloves Garlic, minced
  • 2 tablespoons Lime juice, freshly squeezed for best flavor
  • 2 tablespoons Soy sauce, low sodium option recommended
  • As needed Skewers, wooden or metal, soaked if wooden
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Cut the chicken breast into bite-sized pieces.
  2. In a bowl, mix coconut milk, grated ginger, minced garlic, lime juice, soy sauce, salt, and pepper.
  3. Marinate the chicken pieces in the mixture for at least 1 hour or overnight for best results.
  4. Preheat the grill to medium-high heat.
  5. Thread the marinated chicken onto skewers.
  6. Grill skewers for about 10-12 minutes, turning occasionally, until cooked through and slightly charred.
  7. Serve hot with additional lime wedges and your choice of dipping sauce.

Notes

For the best flavor, let the chicken marinate overnight. Use metal skewers to avoid soaking wooden skewers. Grill at medium-high heat to achieve the ideal char without drying out the chicken.
