Grilled Zucchini

Grilled zucchini is a simple yet flavorful side dish perfect for summer barbecues and picnics.

Ingredients

  • 4 medium zucchinis, fresh, firm zucchinis are best.
  • 2 tablespoons olive oil, use extra-virgin for more flavor.
  • 1 teaspoon salt, adjust to taste.
  • 1/2 teaspoon black pepper, freshly ground is preferable.
  • 1 teaspoon garlic powder, can substitute with minced garlic.
  • 1 teaspoon Italian seasoning, or use a mix of dried basil and oregano.

Instructions

  1. Preheat the grill to medium-high heat.
  2. Wash and slice the zucchinis lengthwise into half-inch thick slices.
  3. Toss the zucchini slices with olive oil, salt, pepper, garlic powder, and Italian seasoning until evenly coated.
  4. Place the zucchini on the grill and cook for about 4-5 minutes on each side, or until tender and grill marks appear.
  5. Remove from the grill and serve warm, optionally garnished with fresh herbs.

Notes

Choose zucchinis of similar size for even cooking. For added flavor, marinate the slices in olive oil and seasonings for 30 minutes before grilling.
