Healthy Apricot Granola

A nutritious snack option combining rolled oats, dried apricots, and nuts, perfect for breakfast or as a crunchy topping for yogurt.

  • Total Time: 35 minutes
  • Yield: 8 servings 1x

Ingredients

Scale
  • 2 cups Rolled oats (use gluten-free oats if needed)
  • 1 cup Dried apricots, chopped (can substitute with raisins or cranberries)
  • 1/2 cup Nuts (almonds, walnuts, chop or leave whole based on preference)
  • 1/4 cup Honey or maple syrup (use agave syrup for a vegan option)
  • 1/4 cup Coconut oil (can use olive oil or butter as alternatives)
  • 1/2 teaspoon Cinnamon (add more for enhanced flavor)
  • 1/4 teaspoon Salt (enhances sweetness)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix the rolled oats, chopped dried apricots, and nuts in a large bowl.
  3. Heat the honey or maple syrup and coconut oil in a small saucepan until melted.
  4. Stir in the cinnamon and salt, then pour the mixture over the oat mixture and stir until well combined.
  5. Spread the granola evenly on a baking sheet.
  6. Bake for 20-25 minutes, stirring halfway through, until golden brown.
  7. Cool before storing in an airtight container.

Notes

Use a silicone mat on the baking sheet to prevent sticking. Combine dried fruits with oats quickly to maintain flavor.
