Ingredients
Scale
- 1 pound Ground Beef (use lean for a healthier option)
- 1 can (15 ounces) Kidney Beans (drained and rinsed)
- 1 can (14.5 ounces) Fire-Roasted Tomatoes
- 1 Medium Onion (chopped)
- 2 cloves Garlic (minced)
- 2 tablespoons Chili Powder (adjust to taste)
- 1 teaspoon Ground Cumin
- 1 teaspoon Smoked Paprika
- 1 tablespoon Cocoa Powder (omit for traditional chili)
- Salt and Pepper (to taste)
- Cheddar Cheese (for serving, optional)
- Green Onions (for serving, optional)
Instructions
- Brown the Beef in a large pot over medium heat until fully cooked. Drain excess fat.
- Add the chopped onion and minced garlic to the pot, cooking until softened.
- Incorporate the chili powder, ground cumin, smoked paprika, and cocoa powder; cook for another minute to bloom the spices.
- Add the kidney beans and fire-roasted tomatoes, mixing well. Season with salt and pepper.
- Simmer the mixture, bringing it to a simmer, then reduce heat and cook for 20-30 minutes, stirring occasionally.
- Serve hot, topped with cheddar cheese and chopped green onions.
Notes
Use lean ground beef to reduce grease. Allow to simmer for deeper flavors and consider pairing with cornbread.
